Features Honduran cacao (trinitario and criollo varieties). This bar has a distinctive savouriness rather than typical bitterness. It's versatile—we've found it complements wines perfectly, as demonstrated at a Leon & Sons tasting.

Wampusirpi, Honduras

Wampusirpi Chocolate

This Honduran region produces exceptional cacao with creamy flavor notes and floral aromatics characteristic of Fino de Aroma grade. The region holds ecological importance for migratory birds and features challenging accessibility via longboat routes.

Palmichal Single-Origin

Palmichal Chocolate

This origin highlights fruity notes—raisins and plums with honeyed qualities. I've been experimenting with pairing it with port wines, dessert wines, cognacs, and unexpectedly with grilled steak. I'm envisioning smoked brisket applications.
