Ingredients

8 ozAtucún 70% Cacao(finely chopped)
1/2 cupHeavy cream
2 tbspUnsalted butter(room temperature)
1 tspVanilla extract
1/4 cupCacao powder(for rolling)
OptionalFlaky sea salt(for garnish)

Instructions

  1. 1Place chopped chocolate in a heatproof bowl
  2. 2Heat cream in a saucepan until just beginning to simmer
  3. 3Pour hot cream over chocolate and let sit for 2 minutes
  4. 4Stir gently from center outward until smooth and glossy
  5. 5Add butter and vanilla, stir until fully incorporated
  6. 6Cover and chill ganache for 2 hours until firm but scoopable
  7. 7Using a small scoop or spoon, form 1-inch balls
  8. 8Roll each truffle in cacao powder
  9. 9Chill again until ready to serve
