
Dark Chocolate Truffles

Luxurious truffles made with real 70% single-origin cacao, rolled in cacao powder for an intense, grown-up chocolate experience. Four core ingredients, no baking.
Ingredients
8 oz Atucún 70% cacao, finely chopped
1/2 cup heavy cream
2 tbsp unsalted butter, room temperature
1 tsp vanilla extract
1/4 cup cacao powder, for rolling
Optional: flaky sea salt, for garnish
Instructions

Place chopped chocolate in a heatproof bowl

Heat cream in a saucepan until just beginning to simmer

Pour hot cream over chocolate and let sit for 2 minutes

Stir gently from center outward until smooth and glossy

Add butter and vanilla, stir until fully incorporated

Cover and chill ganache for 2 hours until firm but scoopable

Using a small scoop or spoon, form 1-inch balls
