Ingredients
8 ozAtucún 70% Cacao(finely chopped)
1/2 cupHeavy cream
2 tbspUnsalted butter(room temperature)
1 tspVanilla extract
1/4 cupCacao powder(for rolling)
OptionalFlaky sea salt(for garnish)
Instructions
- 1Place chopped chocolate in a heatproof bowl
- 2Heat cream in a saucepan until just beginning to simmer
- 3Pour hot cream over chocolate and let sit for 2 minutes
- 4Stir gently from center outward until smooth and glossy
- 5Add butter and vanilla, stir until fully incorporated
- 6Cover and chill ganache for 2 hours until firm but scoopable
- 7Using a small scoop or spoon, form 1-inch balls
- 8Roll each truffle in cacao powder
- 9Chill again until ready to serve
