Ingredients

  • 8 oz Atucún 70% cacao, finely chopped

  • 1/2 cup heavy cream

  • 2 tbsp unsalted butter, room temperature

  • 1 tsp vanilla extract

  • 1/4 cup cacao powder, for rolling

  • Optional: flaky sea salt, for garnish

Instructions

    Place chopped chocolate in a heatproof bowl

    Heat cream in a saucepan until just beginning to simmer

    Pour hot cream over chocolate and let sit for 2 minutes

    Stir gently from center outward until smooth and glossy

    Add butter and vanilla, stir until fully incorporated

    Cover and chill ganache for 2 hours until firm but scoopable

    Using a small scoop or spoon, form 1-inch balls

    Roll each truffle in cacao powder
